GENERAL FUNCTIONS
The primary role, with the assistance of troops, the candidate will be responsible for the coordination of and instruction to Personnel and Police from the various Contingents that make up the force, currently Burundi and Djibouti (French speaking), Ugandan and Kenyan (English speaking).
The courses of instructions are:
§ Kitchen Hygiene and Safety– basic instruction on sources of food poisoning, bacteria control, kitchen & personal hygiene and machinery operation. Ensuring all kitchen staff are able to operate and improve contingent standards of operations.
§ Diesel Operators– use of diesel operated mobile field kitchens, operation and maintenance of all diesel burners. Field site preparation.
§ Menu Planning, Good Recognition & Ordering– primarily for Officers who require education on humanitarian Rationing Systems.
In addition the following duties are expected:
§ The incumbent will assist in the further development of the Catering Training Manual
§ Assist with stock control and issues of all spare parts and assets
§ Track and monitor field equipment locations and service ability. Advising and ensuring the administrator keeps the database up to date.
§ Carry out site visits as required ensuring training values are adhered to and maintenance schedules are kept
§ Assist with the oversight of maintenance Contracts for the repair of all catering equipment
§ Assists with the gathering and dissemination of information required by the Chief Rations Unit.
ESSENTIAL EXPERIENCE
§ The incumbent should have at least 10 years of experience as a Chef/Catering Officer in a military environment
§ Be fully conversant with HACCP implantation and monitoring
§ Have previous teaching / instruction experience
§ Be familiar with the humanitarian Ration Ordering System and control
§ Have a practical ‘hands on’ approach to achieving the goals set
§ Be able to use the Excel spreadsheets
§ Working knowledge of English and French language are required.
